How to make the best gnocchi at home

Ingredients:

  • 900 g potatoes, preferably russet

  • 1 1/2 cups (180 g) all-purpose flour

  • 1 egg

  • 1 tsp salt

Instructions:

  1. Preheat the oven to 200°C.

  2. Wash the potatoes and pierce them with a fork. Place them on a baking sheet and bake for 45-60 minutes, or until they are tender when pierced with a fork.

  3. Remove the potatoes from the oven and let them cool slightly. Peel them while they are still warm.

  4. Mash the potatoes with a potato masher or fork until they are smooth and free of lumps.

  5. Add the flour, egg, and salt to the mashed potatoes and stir until the mixture forms a dough.

  6. Dust a clean surface with flour and turn the dough out onto it. Knead the dough until it is smooth and elastic, about 3-4 minutes.

  7. Divide the dough into 4 equal pieces. Roll each piece into a long rope about 1 inch (2.5 cm) thick.

  10. Bring a large pot of salted water to a boil. Add the gnocchi to the boiling water, a few at a time, and cook until they float to the surface, about 2-3 minutes.
